Black Beans & Cheese Frittata Skillet Omelet

Ingredients

3  tablespoons  Hill Country Fare Canola Oil

2  Tia Rosa Corn Tortillas, cut in thin 1/4-inch strips

1  (15 ounce) can  Bush's® Best Black Beans

1 1/2  cups  Hill Country Fare Frozen Chuckwagon Corn, drained

6  large  eggs, beaten

1  cup  H-E-B Shredded Colby Jack or Jalapeno Cheese

Instructions


Heat a large nonstick skiller over High heat for 2 minutes. Add the oil and tortilla strips and stir fry for 2 minutes or until golden. Drain tortilla strips on a paper towel.

Beat the eggs and add the corn and drained beans. Season to taste with salt and pepper. Place egg mixture in a cast-iron skillet sprayed with nonstick cooking spray and top with shredded cheese. Bake in a 375-degree oven for 8 to 10 minutes or until center is firm. Garnish with tortilla strips and serve
