Beef & Green Chili Enchilada Casserole

1  12 ounce tub  H-E-B Fully Cooked Seasoned Shredded Beef

10  corn tortillas

1  red bell pepper, chopped

1  15 ounce can  black beans

1  7 ounce can  chopped green chilies

12  ounces  H-E-B Queso Quesadilla slices

1  10 ounce can  green chile enchilada sauce

1  7 ounce can  green Mexican sauce


Heat oven to 350°F. Spray a 9 x 13-inch baking dish with non-stick cooking spray.

Heat beef in microwave according to package directions. Separate beef shreds with a fork.

Meanwhile, tear tortillas into bite-sized pieces or chop coarsely. Chop bell pepper. Rinse and drain black beans. Separate cheese slices. Combine sauce ingredients.

To assemble casserole, spread half of tortilla pieces over bottom of prepared baking dish. Place half of beef shreds evenly over tortillas; layer half the bell pepper, half the black beans and half the green chilies over beef. Pour 1 cup sauce evenly over top. Lay half the cheese slices over sauce.

Layer remaining ingredients in the same order listed in step 4.

Bake 40 to 45 minutes or until cheese is browned around the edges and casserole is bubbly. Remove from oven and let stand 5 to 10 minutes. Cut into squares and serve while hot.
