1  bunch broccoli raab, cleaned, trimmed

8  oz.  leftover roast beef or deli roast beef, chopped

1/4  c.  peppadews, chopped

1/2  red onion, sliced thin

1  tsp.  anchovy paste (optional)

2  cloves garlic, minced

1  tsp.  dijon mustard

1 1/2  Tbsp.  olive oil

1  Tbsp.  lemon juice

15  oz.  cont. mixed greens


In a small jar or container with a lid, combine oil, anchovy paste, garlic, lemon juice, and mustard. Close lid tightly and shake vigorously.

Set a large pot of water to boil. Once water has begun to boil add in the broccoli raab. Cook for 3 minutes or until bright green. Drain well and chop into 2-inch pieces.

In a separate large bowl, combine all ingredients and toss to coat. Separate into 4 portions and serve.
