1 (12 ounce) bag frozen H-E-B Fully Cooked® Taco-Seasoned Beef Crumbles
2 teaspoons oil
1 each onion, chopped
1 (15 ounce) can black beans, rinsed and drained
2 (10 ounces) cups frozen corn
1 (14 1/2 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 cup shredded Colby Jack cheese
2 large eggs
1 cup milk
1 cup yellow cornmeal
1/2 teaspoon baking powder
1/2 cup shredded Colby Jack cheese
Heat oven to 425 degrees F. Chop onion. Rinse and drain black beans.
Heat oil in a large, ovenproof skillet over Medium High heat. Sauté onion 3 to 5 minutes until tender. Add beef and corn; stir to thaw. Add beans, tomatoes, tomato sauce and 1 cup cheese; stir to blend. Remove skillet from heat.
Whisk eggs and milk together in a medium bowl; whisk in cornmeal and baking powder. Pour topping evenly over beef mixture in skillet; sprinkle with 1/2 cup cheese.
Bake 20 minutes, or until the top feels firm when lightly touched. Serve with a spoon.
