2 H-E-B smoked beef sausage links thin sliced
1 cup H-E-B Ready, Fresh Go!® chopped onion
1 cup H-E-B Ready, Fresh Go!® 3-color chopped peppers
2 H-E-B Ready, Fresh, Go!® garlic cloves chopped
2 cans (15.5 oz.) Hill Country Fare pinto beans rinsed & drained
1 Knorr chicken flavor bouillon cube crumbled
1 container (12 oz.) H-E-B Ready, Fresh Go!® pico de gallo
Heat a skillet over high heat for 3 minutes. Add the sliced sausage and stir fry for 1 minute. Add the chopped onion and three color peppers and stir-fry with the sausage for2 more minutes. Add the chopped garlic to the mixture and stir-fry for 1 more minute.
Stir in the rinsed and drained pinto beans, 2 1/2 cups water, to low, cover and cook for 25 minutes. Season the soup to taste with salt and pepper.
For a creamier soup, you can remove 2 cups of the soup and process to a smooth texture. Add the processed soup to the rest of soup and stir. Serve the soup and garnish with 2 tablespoons Pico de Gallo
