1 pkg. H-E-B fully cooked® fully fit beef tenderloin medallions
1/4 cup H-E-B extra virgin olive oil
1/4 cup H-E-B red wine vinegar
1/4 cup H-E-B roasted red pepper tapenade
1 Tbsp. H-E-B sugar
1 pkg. H-E-B Ready, Fresh Go!® field greens
1 pkg. H-E-B Ready, Fresh Go!® sliced red onions
Heat beef tenderloin according to package instructions.
In a large bowl whisk together oil, vinegar, Tapenade and sugar.
Empty lettuce into bowl and toss to coat with dressing.
Divide salad into four bowls and top with warm beef and red onions.
