4  tenderized beef cube steaks (about 1 pound)

*  ground black pepper

3/4  cup  dry Italian-style bread crumbs

3/4  cup  grated Parmesan cheese

2  tablespoons  grated Parmesan cheese

2  eggs, beaten

1  tablespoon  water

2  tablespoons  olive or vegetable oil

4  slices  thin slices of mozzarella cheese

3/4  cup  fresh marinara sauce


Heat oven to Broil. Line a large baking sheet with foil.

Season steaks with pepper. Combine breadcrumbs and 3/4 cup grated Parmesan in a shallow pan. Beat eggs and water in a small bowl.

Heat 1 tablespoon oil in a large non-stick skillet over Medium-High heat 3 minutes.

Turn steaks in bread crumb mixture to coat. Dip in egg, then in bread crumb mixture again to coat both sides.

Cook breaded steaks in heated oil 2 minutes per side in 2 batches to prevent overcrowding. Heat 1 tablespoon oil in skillet between batches. Remove steaks to prepared baking sheet.

Top steaks with mozzarella slices. Spoon marinara sauce evenly over mozzarella and sprinkle with 2 tablespoons shredded Parmesan.

Broil 2 to 3 minutes or until cheese melts. Serve immediately.
