2 Bartlett pears
2 shallots, sliced
1/3 cup walnuts, coarsely chopped
2 teaspoons olive oil
* ground black pepper
1 5 ounce bag Fresh Express Spring mix
1 8 ounce bag Fresh Express Riviera salad blend
2/3 cup Marie's Fat Free red wine or raspberry vinaigrette dressing
Heat oven to 375 degrees.
Slice whole pears, crosswise, into 1/4-inch thick slices. Lay slices on a large baking sheet in a single layer. Season lightly with pepper. Slice shallots very thinly, then toss with oil in a small bowl. Spread shallots and walnuts on baking sheet with pears.
Bake 10 minutes, until shallots are tender and walnuts lightly browned. Remove from oven. Cut pear slices into quarters; cut away and discard seeds.
Toss greens with dressing; season to taste. Add pears, shallots and walnuts. Toss gently and serve.
