2 cups all-purpose flour
2/3 cup cup light brown sugar
2 teaspoon baking powder
2 large eggs
1 cup mashed ripe banana (3 medium size)
2/3 cup peanut butter
1/3 cup vegetable oil
1/2 cup milk
1 teaspoon vanilla
Preheat oven to 400 degrees.
In a large bowl mix flour, brown sugar and baking powder together.
In a small bowl combine eggs, banana, peanut butter, oil, milk and vanilla; beat until smooth.
Make a "well" in dry ingredients; add banana mixture all at once.
Stir until dry ingredients are moistened; do not over beat.
Fill 12 greased 2 1/2 inch muffin-pan cups.
Bake for 20 to 25 minutes or until golden brown.
Place pan on wire rack to cool.
Let stand 5 minutes before removing muffins from cups
