1 fillet fresh salmon fillet (1 1/2 to 2 pounds)
* nonstick cooking spray
1 to 2 tablespoons chopped fresh rosemary leaves, according to taste
2 tablespoons olive oil
2 teaspoons fresh lemon juice
1 teaspoon coarse ground black pepper
1 teaspoon kosher salt
Heat oven to 450 degrees. Spray a large baking sheet with nonstick spray. Place salmon on baking sheet, skin-side down.
Combine rub ingredients in a small bowl. Spread rub evenly over top of salmon.
Bake salmon about 15 minutes, or until the color turns from translucent to opaque and fish just begins to flake with a fork. Do not over cook.
Cut fillet into portions, just down to the skin. Lift fish from skin with a spatula; remove to a plate. Serve immediately.
