In this elegant yet simple recipe, a whole salmon fillet is topped with savory goat cheese and chopped walnuts then baked. The results are delicious.
1 1/4 pound Coho Salmon Fillet
• non-stick cooking spray
1 package (5.3 ounce) Chavriea cheese with basil and roasted garlic
1/3 cup chopped walnuts
Heat oven to 450 degrees F.
Coat a large baking pan with non-stick cooking spray and place salmon in pan, skin side down.
Spread cheese over top of salmon.
Chop walnuts; press walnuts into cheese.
Bake salmon 10 minutes per inch of thickness or until fish turns from translucent to opaque and is just beginning to flake. Cut into 4 portions and serve.
