4 cod fillets
* non-stick cooking spray
* salt and pepper
2 carambola (star fruit), sliced very thinly, optional
* Caribbean Sauce:
1/2 cup H-E-B Low-Fat Sour Cream
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
1 jalapeno, seeded and chopped
1/8 teaspoon salt
Heat oven to 450 degrees. Spray a shallow baking pan with nonstick spray.
Lay fish fillets in bottom of baking dish. Season fish lightly with salt and pepper.
Bake fish in upper one-third of oven 10 minutes.
Meanwhile, combine sauce ingredients in a food processor or blender. Process 1 minute or until cilantro and jalapeño are finely chopped.
Slice carambola and lay over fillets. Serve with sauce.
