1 to 1 1/2 pounds Alaskan salmon fillets
1 to 2 teaspoons Chef Paul Prudhommé Blackened Redfish Magic©
1/4 cup prepared creamy cucumber dressing
1/4 cup regular or light sour cream
* minced dill and cucumber, optional
* salt and ground black pepper, to taste
Heat oven to 450 degrees F. Spray a large baking sheet with non-stick spray.
Lay salmon on baking sheet, skin-side down. Season with Redfish Magic.
Bake 10 to 15 minutes, until color turns from translucent to opaque and fish just begins to flake with a fork.
While fish bakes, combine dressing and sour cream. If you wish to add dill and cucumber, chop dill finely to mince. Peel cucumber; cut in half lengthwise and remove seeds. Chop very finely or grate cucumber with the large end of a grater. Stir into sauce; season to taste and serve with fish.
