5 lb. small red potatoes
1/2 c. mayonnaise, regular or non-fat
1 jar Better than Good Bacon Jam
1/2 c. red onions, diced
1 c. cooked, crumbled bacon
1/2 c. bell pepper, chopped
1/2 c. celery, chopped
• salt & pepper, to taste
Scrub potatoes and cut into quarters.
Place in a large post with 4 quarts water; bring to a boil over high heat. Reduce heat to Medium; boil potatoes 15 minutes or until tender. Drain and set aside.
Place mayonnaise and Better Than Good Bacon Jam in a large serving bowl. Stir well.
Add onions, bacon, peppers, and celery and seasoning Add potatoes; toss gently.
Serve while still warm or chill thoroughly and serve cold.
