2 cups Frozen H-E-B super sweet corn
12 Cherry tomatoes cut into quarters
2 H-E-B Fresher Lasting® jumbo avocado halves chopped
1/4 cup Chopped fresh basil
1/2 cup H-E-B Ready, Fresh Go! Chopped red onion
2 Tbsp each: H-E-B Olive Oil and H-E-B red wine vinegar
Cook the corn according to package directions,drain. Allow corn to cool.
Combine corn, tomato, avocado, basil, onion, olive oil and red wine vinegar in a salad bowl. Season the salad to taste with salt and pepper.
Gently toss the salad to coat the ingredients. Cover with plastic wrap and chill for 30 minutes.
