5  (10-ounce) box  frozen Hill Country Fare Asparagus Spears

2  juice of 2 lemons

1  (12-ounce) jar  Farmers Valley roasted red peppers, drained and thinly sliced

1  stick  butter

2  cloves  garlic, chopped fine


Use an electric or stovetop steamer to cook asparagus for HALF the time required by package directions.

Drain and place in TWO 13x9-inch baking dishes (divide asparagus evenly).

Sprinkle lemon juice over asparagus.

Season to taste with salt and fresh cracked black pepper.

Top asparagus with sliced roasted peppers (divide evenly).

Cover with plastic wrap and chill until ready to use.

Combine butter and garlic in a small microwave-safe bowl and cover loosely with plastic wrap.

Microwave on High power for 1 1/2 minutes and strain out garlic; set aside.

Before serving, heat each baking dish of asparagus in microwave oven on High power for 6 minutes.

Pour half of the hot garlic butter over each dish of asparagus before serving (adding butter last keeps asparagus bright green)
