frozen Hill Country Fare Asparagus Spears

juice of 2 lemons
1
(12-ounce) jar
Farmers Valley roasted red peppers, drained and thinly sliced
1
stick
butter
2
cloves
garlic, chopped fine
![]() Instructions ![]() Use an electric or stovetop steamer to cook asparagus for HALF the time required by package directions.
![]() Drain and place in TWO 13x9-inch baking dishes (divide asparagus evenly).
![]() Sprinkle lemon juice over asparagus.
![]() Season to taste with salt and fresh cracked black pepper.
![]() Top asparagus with sliced roasted peppers (divide evenly).
![]() Cover with plastic wrap and chill until ready to use.
![]() Combine butter and garlic in a small microwave-safe bowl and cover loosely with plastic wrap.
![]() Microwave on High power for 1 1/2 minutes and strain out garlic; set aside.
![]() Before serving, heat each baking dish of asparagus in microwave oven on High power for 6 minutes.
![]() Pour half of the hot garlic butter over each dish of asparagus before serving (adding butter last keeps asparagus bright green)
