4  bone-in Pork Center Rib Chops, cut 3/4-inch thick

*  Alessi Sea Salt

*  Hill Country Fare Ground Black Pepper

1/2  teaspoon  dried Morton & Bassett Thyme Leaves

1/2  teaspoon  dried Morton & Bassett Granulated Garlic

*  fresh apricots, pitted & halves (optional)


3/4  cup  Fischer & Wieser® Apricot Orange Marmalade

1  tablespoon  Worcestershire sauce

1/4  teaspoon  ground ginger


Season pork with salt, pepper, thyme and granulated garlic. Combine marmalade and Worcestershire sauce in a small bowl.

Heat charcoal 30 minutes until covered with a light layer of gray ash or heat gas grill on High 10 minutes with lid closed.

Grill chops 4 inches above Medium heat (375 degrees grill surface temperature). To determine grill temperature, hold hand just above grate; if heat causes you to pull away in 4 seconds, heat is ideal for Medium. Cook pork 6 to 8 minutes per side; baste cooked side after turning. Remove when internal temperature of chops reaches 155 degrees F. Baste chops again. Do not overcook; pork should have a light pink blush in the center. Grill apricot halves 3 to 5 minutes per side, if desired; baste generously.
