3 1/2 cups Hill Country Fare Vanilla Wafers
1/4 cup butter or margarine, melted
1/2 cup chopped peanuts
1 can (1 pound 4 oz) sliced apples, drained
1 1/2 cups pineapple preserve
Heat oven to 350 degrees. Spray a 9 x 13-inch baking sheet with non-stick cooking spray.
Place Vanilla Wafers, one cup at a time, in a plastic food bag and crush with a rolling pin. Place crushed wafers and nuts in a medium-size bowl; stir to combine. Add butter and stir until mixture is moist and well blended.
Press crust mixture in the prepared baking sheet. Bake for 10-12 minutes. Let cool.
Arrange apple slices in rows on crust.
Heat pineapple preserve in a microwave-safe dish for 1 minute on High power. Use a brush to spread preserves over apples.
Bake 15 more minutes.
