10 - 12 servings
1 cup sugar
1/3 cup margarine or butter
1 1/2 cups mashed bananas (about 4 medium bananas)
1/3 cup water
1 2/3 cups flour
1 tsp. baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup chopped pecans or walnuts
Preheat oven to 300 degrees.
Oil bottom of loaf pan only.
Mix sugar and margarine in bowl.
Add bananas and water; beat 30 seconds.
Combine dry ingredients and blend into banana mixture until moist.
Stir in nuts.
Pour into prepared pan, filling two-thirds full.
Bake until wooden toothpick comes out clean, about one hour.
Cool five minutes and remove from pan
