1  pt.  H-E-B Select Sweet Tomatoes, halved

3/4  c.  Central Market Organics Quick Cook 5 Grains, uncooked

3  c.  H-E-B Baby Spinach

1  c.  shredded carrots

1/2  c.  Central Market Meyer Lemon Salad Dressing


Add grains and 1 1/2 cups water to a medium saucepan. Bring to a boil and reduce heat. Cook 10 minutes or until all water is absorbed.

Pour cooked grains into a large serving bowl. Mix with tomatoes, spinach, and carrots until well combined.

Pour 1/2 cup dressing over salad and toss until well coated. Serve immediately for a warm and hearty salad or chill 30 minutes to enjoy a cool and refreshing meal.
