"That" Tremendous Thompkins Taco

Ingredients

1  bunch  Swiss chard, chopped

1  bunch  kale, chopped

2  cans (14.5 oz. each)   H-E-B Black Beans, drained

1 1/2  Tbsp.  Adams Reserve Lopez Family Rub

1  cntr.  H-E-B Pico de Gallo

2  avocados

1  lime, juiced

1  jar  H-E-B "That" Green Sauce

1  tsp.  kosher salt

1  bag  Central Market Tortilla Chips (Hatch, Sweet Potato, Flax etc.)

1  pkg.  H-E-B Organics Shredded Pepper Jack Cheese

Instructions


In a large stock pot mix: Swiss chard, kale, black beans, Lopez Rub, & pico. Stir and cook on medium heat for aprox. 13-15 minutes, or until everything is wilted and cooked down well. Remove pan from heat.

Then in a food processor add: avocados, lime juice, “That” green sauce and salt. Cover and blend until “That” avocado sauce is whipped in consistency.

Build and layer your “That” Tremendous Tompkins Taco (tortilla chips or crispy taco shells first, then “That” avocado sauce mixture, next kale/Swiss chard mixture, and as a final garnish a liberal topping of HEB organic Pepper Jack cheese).
