2 medium red Bartlett pears
* olive oil cooking spray
1/8 teaspoon salt
1/8 teaspoon ground black pepper
2 bags (5 oz.) spring mix salad blend
1/4 cup light champagne vinaigrette dressing
4 ounces blue cheese crumbles
Heat oven to 350 degrees.
Cut pears crosswise into 1/4-inch thick slices. Arrange on a large baking sheet in a single layer. Spray slices with olive oil spray. Sprinkle evenly with salt and pepper.
Roast pear slices in center of oven 15 to 20 minutes or until crisp-tender. Remove and let cool. Cut into 1-inch pieces; discard seeds.
Toss greens in a large bowl with salad dressing and pears. Season to taste, top with crumbled cheese and serve immediately.
