8hard-cooked H-E-B eggs peeled and chopped
3celery ribs, chopped finely
1(2 ounce) jardiced pimientos, drained
1/2cupmayonnaise, regular, low fat, or fat free
1/4cupsweet or dill pickle relish (optional)
Combine all ingredients in a large mixing bowl and toss to coat.
Season to taste with salt and pepper.
Cover with plastic wrap and chill for 30 minutes or more.
Serve in sandwiches, over lettuce and tomato wedges, or with fruit
