hard-cooked H-E-B eggs peeled and chopped

celery ribs, chopped finely

(2 ounce) jar
diced pimientos, drained

mayonnaise, regular, low fat, or fat free

sweet or dill pickle relish (optional)
![]() Instructions ![]() Combine all ingredients in a large mixing bowl and toss to coat.
![]() Season to taste with salt and pepper.
![]() Cover with plastic wrap and chill for 30 minutes or more.
![]() Serve in sandwiches, over lettuce and tomato wedges, or with fruit
