8 hard-cooked H-E-B eggs peeled and chopped
3 celery ribs, chopped finely
1 (2 ounce) jar diced pimientos, drained
1/2 cup mayonnaise, regular, low fat, or fat free
1/4 cup sweet or dill pickle relish (optional)
Combine all ingredients in a large mixing bowl and toss to coat.
Season to taste with salt and pepper.
Cover with plastic wrap and chill for 30 minutes or more.
Serve in sandwiches, over lettuce and tomato wedges, or with fruit
