1 (14.5 ounce) can Hill Country Fare Pink Salmon, drained, with bones & skin removed and flaked
1 (8 ounce) package H-E-B Fresher Lasting Avocado Chunks, sliced or chopped
1 (12 ounce) container prepared pico de gallo
1 (6 ounce) package Hill Country Fare Corn Muffin Mix
2/3 cup H-E-B milk, whole, 2 %, low fat or fat fre
1 teaspoon McCormick Black Pepper
Combine flaked salmon, avocado, pico de gallo and lime juice in a large salad bowl. Season to taste with salt and black pepper. Cover with plastic wrap and refrigerate for 30 minutes.
Prepare the Hill Country Fare Corn Muffin mix according to package instructions using a square 8-inch pan. Cool cornbread and cut into 1-inch cubes.
Toss cubed cornbread into chilled salmon mixture. Serve with your favorite salad dressing.
