2 1/2 c.zucchini, grated,
1c.crushed crisp rice cereal,
1c.red bell pepper, diced,
**non-stick cooking spray,
1Using the grating attachment on a food processor or a box grater, shred zucchini.
2Combine the remaining ingredients into a bowl.
3Form the zucchini mixture into 8 patties place them on a foil lined sheet pan and refrigerate for 1 hour.
4Heat a nonstick skillet over medium high-heat. Add in ? cup of canola oil.
5Cook each patty for 3 to 4 minutes per side. Serve with marinara sauce.
