3/4lb.extra lean ground beef,
1 3/4c.Cookwell & Co. Two-Step Chili Mix,
1/3c.2% shredded cheddar cheese,
1Preheat oven to 350ºF. Wash sweet potatoes and poke holes in them with a fork. Bake until tender, approximately 45 minutes.
2Meanwhile, brown beef in a large non-stick skillet. Add chili mix, bring to a simmer and reduce heat. Cook on Low while potatoes bake.
3Carefully remove sweet potatoes from oven. Cut each potato in half lengthwise. Using a fork, gently mash the flesh of the potato inside the shell.
4Spoon a generous amount of chili over each potato and top with green onions and a sprinkle of cheese.
