Ingredients

1Tbsp.vegetable oil,

1lb.large scallops,

1/2 tsp.black pepper,

1 tsp.lemon zest ,

Directions

1Place a large non-stick skillet over High heat. Add oil and heat until almost smoking.

2Season scallops with pepper and lemon zest, place in skillet, and sear 4 minutes.

3Turn scallops and remove pan from heat. Serve immediately.
