Ingredients

3lbs.boneless skinless chicken breast, cut into pieces,

1container (32 oz.)low sodium chicken broth,

1onion, diced,

4carrots, cut into 2-inch pieces,

2clovesgarlic, sliced,

4parsnips, peeled & cut into 2-inch pieces,

2stalkscelery, cut into 2-inch pieces,

1c.frozen peas,

1c.frozen corn,

1bay leaf,

1tsp.dried thyme,

Directions

1Combine all ingredients in a slow cooker. Set heat to Medium and cook for 8 hours or until chicken is cooked thoroughly.
