Bacon and Cheddar Waffles

1 pkg.H-E-B Fully Cooked Bacon, small diced,

1 1/2c.H-E-B Natural Cheese Cheddar, shredded,


1Tbsp.canola oil,

1c.H-E-B Buttermilk Complete Pancake Mix,


1Preheat waffle iron.

2Mix water and oil and Buttermilk Complete Pancake Mix; Blend well (somewhat lumps batter makes light, fluffy waffle).

3Heat chopped bacon in microwave according to package directions.

4Spoon 1/4 cup batter into hot iron and immediately add approximately 2 Tbsp. cheddar and 1 Tbsp. bacon per waffle.

5Close waffle iron and cook according waffle iron directions.
