3Tbsp.Ottavio Grapeseed Oil, divided,
1 1/2lb.salmon filet,
2Tbsp.Adams Reserve House Rub,
1/2c.Better Than Good Bacon Jam,
•green onions (optional),
1Preheat oven to 400ºF. Place a skillet over medium-high heat.
2Rub 1/2 of grapeseed oil on salmon fillet and season with Adams Rub.
3Add remaining oil to preheated skillet and heat until shimmering but not smoking. Add fish skin-side up. Cook 4 - 5 minutes, turn over and cook an additional 4 minutes, depending on thickness of fish.
4Spoon bacon jam over fish and bake 1 - 2 minutes to finish cooking (allow 10 minutes total cooking time per inch of thickness).
5Garnish with green onions if desired.
