Chicken & Black Bean Soup With Avocado

2Tbsp.canola oil ,

1 1/2lbs.boneless skinless chicken thighs, chopped,

1onion, chopped,

1Tbsp.ground cumin,

1Tbsp.chopped garlic,

2cans (15 oz. each) black beans, rinsed & drained,

1qt.chicken broth,

*salt and pepper, to taste,

1avocado, sliced,


1Preheat a medium soup pot to High. Add canola oil, chicken, onion, cumin and garlic. Sauté 10 minutes, stirring often.

2Add black beans and chicken broth. Bring to a boil, reduce to Medium-Low and cook 1 hour. Season with salt and pepper.

3Serve in large soup bowls and garnish with avocado.
