Ingredients

2Tbsp.canola oil,

1 1/2lbs.beef stew meat, into 1/2-inch cubes,

1onion, coarsely chopped,

1Tbsp.chopped garlic,

1 1/2c.H-E-B No Salt Added Plum Tomatoes,

1ctn. (16 oz.) Central Market Organics Low Sodium Beef Broth,

1potato, quartered,

1bag (16 oz.) frozen mixed vegetables,

1 tsp.salt,

1/2baguette (optional),

Directions

1In a soup pot bring oil to a High heat. Add beef and cook 5 minutes, stirring frequently. Add onion and garlic; cook an additional 10 minutes.

2Add tomatoes, beef broth, potatoes, frozen vegetables, salt and pepper. Bring to a boil, reduce heat to Medium-Low, cover and cook 30 minutes or until potatoes are done.
