2large eggplants,

2Tbsp.olive oil,

1 jarCookwell & Company Two-Step Veracruz Mix,

1/2c.Hill Country Fare 100% Whole Grain Bread Crumbs,

6Tbsp.Boursin Light Garlic & Herbs Cheese,


1Preheat oven to 350°F. Coat a casserole dish with nonstick spray and set aside.

2Peel eggplants, slice, and dice into 1" cubes.

3Heat a large skillet over Medium-High heat 2 minutes. Add oil and eggplant. Sauté 3-4 minutes, until fork tender.

4Add Veracruz mix, stir, and cook until warmed through.

5Transfer to prepared dish; top with bread crumbs and cheese. Bake 20 minutes.
