Mole Pork Tacos

3-4lbs.boneless pork shoulder roast,

3cloves garlic, minced,

1sweet onion, sliced,

1jar (9 oz.) mole mexican condiment,

2c.low sodium chicken broth,

12H-E-B Corn Tortillas, warmed,

1/4c.cilantro, chopped,


1Trim fat from roast. Place roast, garlic, and onion in a slow cooker.

2Combine mole and broth in a medium bowl; pour over all in slow cooker.

3Cover and cook on Low heat 8 hours.

4Remove meat and shred using two forks.

5Fill each tortilla with meat and top with cilantro.
