1Preheat oven to 350°F. In medium bowl, mix together carrots and potato. Microwave until tender, approximately 5 minutes. Mix in chicken, cheese, and fajita seasoning.
2On prepared baking sheet, separate crescent rolls into 8 pieces. Place four pieces together to form a four-pointed star shape, with edges overlapping. Rub edges with small amount of water to seal. Spoon 1/4 of chicken mixture into center of each star, fold up points to form pyramids. Bake 15 minutes, or until edges are brown.
