Cranberry and Walnut Pork Roast

Ingredients

• non-stick cooking spray,

1/2c.H-E-B Whipped Low Fat Cream Cheese,

1/4c.H-E-B Dried Cranberries,

1/4c.walnut pieces,

4pork top round Milanesa cutlets,

*ground black pepper,

*H-E-B More Fruit Raspberry Fruit Spread ,

Directions

1Preheat oven to 350°F. Heat a large oven-safe skillet over Medium heat and spray with non-stick cooking spray.

2While pan heats, mix cream cheese, dried cranberries, and walnuts in a small mixing bowl. Divide into four portions and set aside.

3Season both sides of pork cutlets with pepper. Smear 1 side of each cutlet with a portion of cream cheese mixture and roll into a pinwheel.

4Set seam-side down in hot skillet and sear 2 minutes. Place skillet in hot oven 5 minutes, or until internal temperature of pork reaches 145°F. Top with raspberry fruit spread, if desired.
