1Tbsp.H-E-B Extra Virgin Olive Oil,
4garlic cloves, minced,
2cans (14.5 oz. each ) H-E-B Diced Tomatoes with Green Chilies,
1 tsp.dried oregano,
1/4c.Central Market Chopped Spanish Olives, drained,
1/4c.H-E-B Capers, drained,
1Heat oven to 375°F.
2Heat olive oil in a large skillet. Cook tilapia filets 2 minutes on each side and arrange tightly in a 9x13-inch baking dish. Set baking dish aside.
3Return skillet to burner and sauté garlic 2 minutes or until slightly brown. Add diced tomatoes and oregano, and bring to a boil. Reduce heat, add olives and capers, and simmer 5 minutes.
4Pour hot tomato mixture evenly over tilapia filets in baking dish. Bake until tilapia is cooked and heated through, about 5 minutes.
5Remove from oven and enjoy!
