1c.chopped yellow onion,
1.5lbs.H-E-B 90% Lean Ground Beef,
1/4 tsp.H-E-B Kosher Salt,
1/2tsp.Central Market Dried Thyme,
1/2c.H-E-B Reduced Sodium Beef Broth,
1bag (16 oz.) frozen H-E-B Mixed Vegetables,
2c.prepared complete instant mashed potatoes,
1Preheat oven to 400°F.
2Heat oil in a large saucepan over Medium heat. Add onion and sauté until soft.
3Add ground beef and cook until beef is no longer pink. Season with salt, pepper, and thyme.
4Stir in beef broth and frozen vegetables. Lower heat and cover saucepan until vegetables are warmed through.
5Pour beef mixture into a deep 9x13-inch baking dish.
6Spread mashed potatoes over beef mixture, leaving peaks in the mashed potatoes.
7Bake 10 minutes or until potato peaks are golden brown. Allow 5 minutes to cool before serving.
