Ingredients

1 lb. H-E-B Lean Ground Beef,

1 jar (24 oz.) H-E-B Marinara Sauce,

8 whole wheat lasagna noodles,

1 c. finely chopped kale (packed tightly),

1 1/2 c. diced cauliflower,

1 c. H-E-B Fat Free Mozzarella Cheese,

Directions

1 Preheat oven to 400°F.

2 Cook lasagna noodles according to package directions; drain and set aside.

3 Meanwhile, cook beef over medium heat in large skillet until no longer pink. Stir in marinara sauce, kale and cauliflower; heat through.

4 Place noodles on wax paper. Spread 1/3 cup sauce mixture and 2 Tablespoons cheese over each noodle; roll up tightly and place each noodle seam side down in an ungreased 13 x 9 inch baking dish. Top roll-ups with remaining sauce.

5 Bake uncovered approximately 15 minutes, or until heated through.
