Ingredients

2Tbsp.H-E-B Olive Oil,

2ruby grapefruits, peeled & sectioned with juice,

1avocado, peeled & sliced,

1pkg. (9 oz.)Fresh Express Spinach,

2thin slicesred onion, rings separated,

1container (12 oz.)H-E-B Fully Cooked Shredded Chicken,

Directions

1Combine olive oil, grapefruit sections with their juice and avocado slices in a large salad bowl. Toss gently to coat.

2Top grapefruit mixture with baby spinach, red onions and shredded chicken. Cover with plastic wrap and chill for 30 minutes or more. Toss before serving.
