Ingredients

• non-stick cooking spray,

1pkg. (12 oz.)H-E-B Wild Mahi Mahi Fillets,

2Tbsp.H-E-B Olive Oil,

•Italian Seasoning or salt & pepper,

1pkg. (8 oz.)Central Market Organics Multigrain Demi-Baguettes,

2pkg. (12 oz. each)H-E-B Italian Garden Medley,

1pkg. (10 oz.) H-E-B Whole Grain Brown Rice,

Directions

1Heat oven to 425°F. Spray a baking dish with non-stick cooking spray. Brush fish fillets with olive oil and season with your favorite Italian seasoning or salt and pepper. Bake on center oven rack 15 minutes. At the same time, bake the multigrain baguettes according to package directions.

2While fish is baking, heat the 2 bags of Italian medley vegetables and keep in bag until fish comes out of oven. Immediately pour Italian vegetables over fish and keep warm. Heat brown rice in microwave and serve with the Italian Baked Mahi Mahi.
