2Tbsp.H-E-B Brown Sugar,
1/4c.Central Market Organics Medium Maple Syrup,
1Tbsp.fresh ginger, grated,
1/2tsp.Central Market Organics Ground Cayenne Pepper,
3lb.pork loin roast,
3garlic cloves, thin sliced,
•Maple Pecan Glaze:,
1/2c.Central Market Organics Texas Pecan Pieces, chopped,
2Tbsp.Central Market Organics Medium Maple Syrup,
1Combine brown sugar, 1/4 cup maple syrup, ginger and cayenne pepper in small bowl. Set aside.
2Make slits all over pork loin, insert garlic slice in each. Place roast in large zipper bag. Add maple ginger marinade. Seal bag, turn roast several times to coat all sides. Refrigerate overnight.
3Heat oven to 450°F. Combine maple pecan glaze ingredients in small bowl. Set aside. Place marinated pork in foil-lined roasting pan, roast 20 minutes. Reduce temperature to 350°F. Roast 30 minutes or until center internal temperature reaches 135°F. Remove from oven, spread maple pecan glaze on top, roast 10 more minutes. Remove from oven, cover with foil, rest 20 minutes before slicing. Serve with sweet potato biscuits.
