4slicesH-E-B Thick Sliced Premium Bacon,
1c.yellow onion, diced,
1pkg. (16 oz.)frozen chopped spinach, thawed and dried,
1block (8 oz.)cream cheese,
1/2c.grated Parmesan cheese, divided use,
1Preheat oven to 350°F. Chop bacon and cook in a large skillet over medium heat about 10 minutes or until browned and crispy. Drain on paper towels.
2Discard all but 1 Tablespoon drippings from pan; add onion and cook 8 to 10 minutes or until tender, stirring occasionally. Add flour and cook 30 seconds. Add spinach,milk, sour cream, and cream cheese. Stir and cook until cream cheese melts. Stir in bacon and 1/4 cup Parmesan.
3Transfer to a 1 1/2 quart casserole or baking dish; top with remaining 1/4 cup Parmesan and bake 20 minutes or until hot and bubbly.
