1lb. mediumtomatillos, husks removed,
1smallonion, peeled and cut into wedges,
1/4c.H-E-B Olive Oil,
•salt and pepper,
1/3c.loosely packed chopped cilantro leaves,
1Heat gas or charcoal grill to high heat (400ºF). Line baking sheet with foil, place grilling mesh over foil, spray with no-stick spray and set aside. 2. Combine tomatillos, pepper, garlic, onion and olive oil in bowl and toss to coat. Season to taste with salt and pepper. Place seasoned vegetable mixture on prepared grilling mesh. 3. Place vegetables and grilling mesh on grill, close lid and grill for 10 minutes or until skins blacken, turning vegetables over once during grilling. 4. Remove from grill and cool. Remove pepper stem. Place grilled vegetables in blender or food processor bowl and process 30 seconds. Add cilantro and sugar and process 30 more seconds. Season to taste with salt and pepper.
