2lb.large Texas Gulf shrimp, peeled and deveined,
1 1/2tsp.H-E-B Texas Originals Chicken Fajita Seasoning,
1box (5 oz.)Central Market Oragnics Herb Garden Salad Mix,
2c.Texas Ruby grapefruit sections,
*juice of 1 lime,
2Tbsp.H-E-B Extra Virgin Olive Oil,
1garlic clove, chopped,
3Tbsp.cilantro leaves, chopped,
1c.Texas orange sections,
1/2tsp.Central Market Organics Cayenne Pepper,
1Process lime juice, olive oil, garlic, cilantro, orange, and cayenne pepper in a blender to a chunky texture (about 1 minute). Refrigerate until ready to use.
2Heat gas or charcoal grill to 400°F. Line baking sheet with foil and top with grilling mesh sprayed with nonstick cooking spray.
3Season shrimp with fajita seasoning and place on prepared grilling mesh. Grill for 2 1/2 minutes on each side.
4Layer salad mix and grapefruit sections on a large platter, arrange grilled shrimp on top, and add vinaigrette as desired.
