Healthy Cooking from H-E-B
1 1/2Tbsp. each:H-E-B Olive Oil & Red Wine Vinegar,
1/2tsp.H-E-B Dijon Mustard,
1can (14 oz.)Hill Country Fare Salmon, drained & bones discarded,
1/2headiceberg lettuce, torn into bite-size pieces,
4green onions, chopped,
1/2c. choppedparsley or cilantro,
1Combine the olive oil, vinegar and mustard in a salad bowl and stir well with a fork.
2Flake the salmon and add to the dressing and toss gently.
3Layer the lettuce pieces, chopped green onion, chopped parsley or cilantro over the salmon, cover and refrigerate until ready to serve. Toss the salad before serving.
