Moroccan Roasted Chicken

1/2tsp. each:Hill Country Fare Cayenne Pepper, Cinnamon & Ground Cumin,

4Hill Country Fare Bone-In Chicken Breasts, trim excess fat & skin,

2Tbsp.H-E-B Olive Oil,

2largecarrots, peeled and cut into 2-inch diagonal slices,

2largezucchini, cut into 1-inch chunks,

*zest of 1 lemon,

*juice of 1 lemon,

2Tbsp.thin sliced fresh mint leaves,


1Heat the oven to 400°F. Line a roasting pan with foil and set aside.

2Combine the cayenne pepper, cinnamon and ground cumin in a small bowl.

3Rub the chicken breasts with 3/4 of the spice rub and arrange on the prepared roasting pan.

4Combine the remaining rub, olive oil, carrots, zucchini, lemon zest and juice in a bowl and toss to coat. Arrange the vegetables around the chicken breasts and roast for 35 minutes or until the meat juices run clear. Place the chicken and vegetables in a serving platter and serve.
