1Tbsp.Hill Country Fare Canola Oil,
1lb.Hill Country Fare Frozen Boneless Skinless Chicken Breasts, thawed and thin sliced,
1c.shredded H-E-B Fat Free Cheddar Cheese,
1can (15 oz.)Hill Country Fare Enchilada Sauce: red or green,
2H-E-B White Corn Tortillas, cut into thin strips,
1Heat oven to 400°F. Spray a 9 X 13-inch baking pan with non-stick cooking spray; set aside.
2Heat a large skillet over high heat for 3 minutes. Add the oil and thin sliced chicken and stir fry the chicken for 3 to 4 minutes or until fully cooked. Season the chicken to taste with pepper.
3Combine the chicken, onion, tomato, shredded cheese and enchilada sauce in the prepared baking dish. Sprinkle the tortilla strips on top and bake uncovered for 20 minutes or until cheese is bubbly on the edges and tortillas are golden. Serve immediately.
