Roasted Tomato Caprese Tapas

2c.H-E-B Seriously Sweet Tomatoes, halved,

1c.H-E-B Shredded Fat Free Mozzarella Cheese,

1/ onion, chopped,

1/4c.basil leaves, chopped fresh,

2Tbsp.H-E-B Extra Virgin Olive Oil,

1/4tsp.Central Market Organics Crushed Red Pepper,

32H-E-B 8 Grains & Seeds Crackers,


1Heat oven broiler to high. Set the oven rack in the middle. Line a baking sheet with foil and spray with no stick olive oil stray. Arrange the tomato halves on the baking sheet and spray them with the no-stick olive oil spray. Broil the tomato slices for 10 minutes or until slightly brown and golden on edges, and cool.

2Combine the roasted tomato slices, shredded mozzarella cheese, chopped red onion, basil leaves, olive oil and crushed red pepper in a mixing bowl; toss lightly. Season the Tomato Caprese mixture with salt and fresh cracked pepper.

3Spread 1 Tablespoon of the Tomato Caprese mixture on each H-E-B 8 Grains & Seeds Cracker.
