2Tbsp.Hill Country Fare Extra Virgin Olive Oil,
1 1/2c. choppedcelery,
1 1/2c. choppedsweet yellow onion,
1/2c. choppedred bell pepper,
1bag (16 oz.)H-E-B Cornbread Stuffing,
1/4c.Central Market Organics Ground Flax Seed,
1can (14 oz.)Hill Country Fare Chicken Broth,
1Heat the oven to 350°F. Spray a 9 x 13 inch baking dish with no stick spray and set aside.
2Heat a large heavy bottom skillet over medium heat for 2 minutes. Add the olive oil, chopped celery, chopped onion and chopped bell pepper and stir fry until the onions are tender (about 5 minutes).
3Combine the cooked vegetables with the corn bread stuffing mix, ground flax seed, 1 can of chicken broth and 1 1/2 cups water in a large mixing bowl. Season the stuffing to taste with salt and pepper and spoon into the prepared baking dish. Loosely cover with a sheet of sprayed foil and bake on the center oven rack for 20 minutes. Remove the foil and bake 5 more minutes. You can prepare this recipe a day in advance, cover and refrigerate until ready to bake.
